The menu created by our Chef Sebastian Stachura is based on the four elements. It is a concept that combines the philosophy of nature with gastronomy. Both create a coherent narrative together, where each element corresponds to specific ingredients and culinary techniques.
Fire - Meat
Our specialty - the strongest of the elements, which reflects the name of our hotel - Ferreus - which means fire, steel. Meat symbolizes energy and intensity. Fire, through roasting, grilling or frying, extracts the fullness of its flavor, creating dishes with a distinct, caramelized flavor. High-quality regional products will be used to prepare them - lamb from Podhale, sirloin from Pniewy.
Air - Poultry
Poultry, thanks to its delicacy and lightness, symbolizes air. Prepared in ways that emphasize its subtle texture, such as roasting, stewing or cooking at a low temperature, it reflects airiness and agility.
Water – Fish and Seafood
Fish and seafood reflect the variability and freshness of water. Their delicate, fresh flavors are emphasized by steaming, grilling or using fish broths. The methods of preparing them mentioned introduce a feeling of lightness to dishes.
Earth – Vegetarian Dishes
Plants symbolize the stability and abundance of the earth. Vegetarian dishes based on vegetables, grains and roots, reflect naturalness and strength, offering a wealth of flavors and textures.
